This is a very old family favorite that I grew up with in Iowa. Really should try this one, people always go bonkers over it & it's REAL easy & cheap. Top has a nice cheesey crusty brown top to it.
Green Rice:
Cook two cups of rice- set aside 2 beaten eggs 2/3 cup salad oil 2 cups Velveta cheese 1 medium onion diced 1 medium bell pepper diced Good handfull of parsley chopped up 2 cups milk.
Mix everything together and bake 45 minutes @ 350
Great leftovers too, makes a LOT.
