Fried Pork with Apples.
Serves 4
8 slices bacon or slightly salted pork 2 lb. cooking apples, quatered, and cored, cut into 8 wedges sugar to taste.
Fry the pork without faty in a hot frying pan until the slices are golden brown and tender, remove them and keep hot in a covered dish. Fry the apples in the pork fat until they are soft, but not mushy, turn them with care. When the apples are done, add sugar to taste and put them in a hot dish with pork slices placed decoratively on top.
Suggested accompaniment: Boiled potatoes with finely chopped parsley, or dark rye bread.
