We get Buffalo in most the grocery stores here, ground, steaks etc. Good lean meat. Buffalo Burgers for 2
1 # ground Bison 4 pieces of thick cut bacon 4 pieces of good square-type packaged cheese- I get the Sharpe cheddar ones 2- Kaiser rolls Ketchup, mustard, hamburger pickles Red Onion slices
Make two large patties ( I always have to give a couple bites to the dog !!!!) that are flat- Please don't make the baseball looking hamburger, hamburgers should be flat and rather thin, IMHO. Cook bacon , keep warm- Grill,then flip to the other side. While other side in cooking brown buns on the grill. When burgers are about done to your liking, place two pieces of bacon on and two pieces of cheese & the bun top Turn off grill let things melt a bit- Remove to the bottom bun that has the red onion, pickles , Ketchup & mustard already added.
Serve with a good potato salad and a cold whole dill pickle & a big glass of amber beer.
Hint: lettuce & tomatoes on the side. Hint II: the buffalo could be substituted for 85/15 ground beef if for instance you lived in Denmark or Indiana or Texas etc.
