Very easy... Cut acorn squash in half and seed- Place in a pan of water ( about 1/2 inch) cavity side down and bake at 350 for an hour-
1 large Acorn Squash 1 stick butter 2 shots+ of rum 3 TBLS brown sugar Medium handfull of pecan pieces- nutmeg
Right before the Acorns are done, belt the butter till just about foaming. Add the brown sugar and stir to dissolve. Add the rum & pecans. ( a little hit of chili powder takes it into the New Mexico style instead of nutmeg) )
Place the Acorns in a bowl, cavity up. Spoon in the butter rum pecan sauce in each Acorn and serve with a sprinkle of nutmeg or mace.
Great with pork & apple type stuff.
