Rhubarb Compote:
Serves 6
500 lb. tender rhubarb. coarsely chopped 8 fl.oz. water 8 oz. sugar
Cook a syrup from the water and sugar. Add the rhubarb pieces and cook 5-6 minutes over a low heat. Remove from the heat and transfer the rhubarb pieces carefully to a serving bowl. Reduce the syrup by looking it for a few minutes before pouring it over the rhubarb. Serve warm or cold.
The compote is a popular accompaniment to lamb and veal, and may also be used for sweets / desserts.
