1 lb. lean ground beef 1 cup chopped onion 1 tsp. salt + 1 tsp. garlic salt 1 can of Rotel or other tomatoes w/green chilies 3 cups cooked rice 1/2 cup sour cream 1 cup (or more) shredded Monterey Jack cheese
Brown ground beef and onion in a large skillet, stirring frequently; drain. Add salt, garlic salt, tomatoes, rice, and sour cream; mix well. Spoon into buttered casserole dish (I use a 2-qt. bowl). Sprinkle with cheese. Bake at 350 degrees for 20 minutes or until heated through.
