Mayonnaise Spice CakeBake 350° for 35-40 min. Preheat oven to 350°. 1 cup Miracle Whip salad dressing or mayonnaise 1 cup Sugar 3/4 cup waterMix together in large bowl then add the following mixture of dry ingredients sifted together in another bowl: 2 cups all purpose flour 1 tsp baking soda 1 tsp cinnamon 1/2 tsp nutmeg 1/2 tsp clovesAfter sifting the dry ingredients and adding to the top mixture, blend and add: 1 tsp vanillaPour into 2 round baking pans (greased and floured) or 1 greased and floured 13" X 9" baking pan. Bake at 350° for 35-40 min. Check round pans at 30 min. to see if they are done. If not cook a few more minutes. Cool on wire rack to ice with your favorite caramel icing. Or cut and eat warm as a snacking cake without icing. Note: Because of the Miracle whip or mayo, this cake does not need eggs. Fond memory: My uncle Ellis used to make this for me every time we went to visit. He would bake in round pans and we waited beside the stove like starving kitties for it to be done. As soon as he took them out of the oven he would cut us a warm wedge and hand it to us on a paper towel. Of course growing kids had to come back for seconds. This is one of my favorite yummy childhood memories. Wasn't until I grew up that we added the caramel icing which is divine with the cake.
