Breakfast Burritos
4- 10 inch flour tortillas 4 eggs 1/4 lb. sausage 1/2 cup hash brown potatos with onions & bell pepers 4 slices cheese 1 tbsp. salsa (for each burrito) dash of salt & pepper Crumble sausage & cook in 10 inch skillet, drain on paper towel. Cook hash browns in separate skillet. Scramble eggs, adding sausage and hash browns just before eggs are set. Wet hands and pat each tortilla slightly with with water. Warm tortillas on hot griddle or skillet until soft . Place a spoonful of eggs mixture in the center of each tortilla, add1/2 slice of cheese, salt and pepper and a spoonful of salsa. Roll and tuck ends in to close. Makes 4 burritos.
