Mexican Hominy 2 cans golden hominy, drained 2 tbsp. butter 1 can cheddar cheese soup 1 lb. lean ground beef Lawry's seasoned salt 1/4 cup chopped onion 1/4 cup chopped bell pepper 1/2 can Roi-tel tomatos 1/2 can diced green chiles Grated cheddar cheese for top Cook meat, onion and bell pepper together, drain & rinse. Add remaining ingredients. Pour into greased casserole dish, top with cheese. Bake 45 minutes at 325F.

If you like hominy, then you will love this. I like it even better the next day. You can even take the leftovers and put spoonfulls on top of tortillia chips, sprinkle with cheese, top with jalapeno slices and heat in hot oven til cheese melts to make cheesy hominy nachos. Yum.
