Since store bought hamburger is at best horrible mystery meat, does anyone know how to make good hamburger at home ? I kinda remember my mom making hamburger when I was a kid back in Iowa. She used one of those meat grinders you attach on the side of a counter- I'm not an organic sorta guy, but the best stuff seems to be the organic 85/15 at $ 75,000.00 a pound !

My friend works for one of this areas best meat markets. People come from Ohio & Michigan for their meat packets. He said there was a number of meats to use. A good chunk of shoulder clod (as he calls it) works good...even a arm roast with fat cut off. A chuck roast or for the best hamburger of all he said; a slab of boneless rib eyes. Depending on if you use a old meat grinder, you have to run then the meat thru twice. Start on larger hole, then regrind on smaller one. Don't have to add and spices or anything. They don't. Just slice your meat up to fit the grinder and thats all there is to it. He did add that a good piece of marblelized meat is perfect for hamburger.

That makes a lot of sense. I've bought ground sirloin and it was so lean that it was dry, tough and lacked flavor. Thanks for checking on this. I think you can still buy the old crank meat grinders.

Fat is what gives meat it's flavor and makes it tender. He suggested cutting what fat you wanted off, but he said you need to leave some on to make the hamburger tasty.

Thanks for that- I always try to get 85/15 at the store, the 70/30 stuff turns into a little greasy piece of nothing- We've got an old grinder someplace, go to the " manger's Special' place in the market and grab a chuck.
