Easy Cream Gravy
For each cup of gravy use 1 tablespoon of oil, bacon or sausage drippings 1 tablespoon of all purpose flour 1 cup of milk Salt & pepper to taste
Choose your skillet by the number of cups of gravy you are making. Not sure what size? If you are making 3 cups of gravy pour that much water into your skillet if it is too full, then use a larger skillet.
Heat skillet on medium heat with oil or drippings. Stir flour in with a wisk until creamy making a rue. Slowly add milk stirring in with the wisk. Keep stirring until thickened. Add salt and pepper to taste stirring in then serve over biscuits, chicken fried steak or anything you would eat cream gravy with.
For years I couldn't make this because no one had a recipe. They all would just say a smidgen of this and a pinch of that. Finally I found a recipe and now after making it so many times I can say a smidgen too but I won't for beginners.

I know what you mean by smidgen Debbie. I add cooked, finely chopped sausage to mine and it's great. I'm going to try your's out also. I'm getting hungry thinking about it!

Hi Lori. Great to have you here. When I am making my sausage gravy, I crumble up my sausage and brown it like ground meat, then I add the flour to it and stir in until it makes a rue then add milk to it. Probably the same way you do. Yes, my favorite is sausage gravy over biscuits. I do the same thing with ground meat which ends up making S.O.S., an old Army mess hall dish. My husband said I was the only one who could make S.O.S. like he had in the Army. He tells everyone that is why he married me. Ha. Not so sure that is a compliment or not. ha. I thought most guys were anxious to get away from Army mess. Ha.
You can also brown dry flour in a skillet and store for future use to make the same gravy with a golden color and a toasty flavor.
Nearly every menu in Texas has Chicken Fried Steak with Cream Gravy. Funny thing when we were on vacation, we stopped at a Dairy Queen in Arkansas and ordered Steak fingers and gravy. The girl behind the counter said, "They only serve that in Texas!"
